Lavender syrup is absolutely delightful and adds such a soothing, floral flavor to your pancakes, coffee, cocktails and mocktails. You only need 3 ingredients and a little over an hour to make this wonderful syrup.

- ½ cup sugar
- ½ cup water
- 1 ½ tbsp dried lavender buds
Place a small saucepan on medium heat.
Add water and sugar to the pot
Stir occasionally to dissolve the sugar.
Bring to a boil (about 3 minutes).
Turn the heat to low.
Simmer for 5 minutes.
Add the lavender buds to the pot.
Cover the pot.
Leave to steep for 1 hour.
Remove the cover. Strain the syrup.
Cool completely.
Use immediately or pour into a sanitized container and refrigerate.
