Cut out the breadfruit stem.
Place the fruit stem-side down on a napkin.
Leave to drain for an hour.
Peel the breadfruit.
Cut into quarters.
Cut out the center and discard.
Rinse and place in salted water.
Slice each breadfruit piece into thin chips.
Place a large pot on medium heat.
Add enough oil for deep frying.
Allow to heat up for 5 - 10 minutes.
Dry the chips with paper towels.
Add the chips to the hot oil.
Turn the chips after 2 - 3 minutes to ensure even cooking.
Continue turning until the chips are golden brown and crispy (total frying about 10 minutes).
Remove breadfruit chips from the oil.
Place on paper napkins to drain.
Sprinkle salt and your choice of seasoning.
Serve hot with dipping sauces.
