Simple Fry Bodi (Asparagus Bean) Recipe

Fry bodi is a simple breakfast side dish made with asparagus (or long) beans, tomato, onion, garlic and fresh seasonings. It is enjoyed with sada roti and other Trini breakfast favorites.

Ingredients

  • 400 g bodi (1 bundle)
  • ½ onion (chopped)
  • 1 garlic clove
  • 1 pimento pepper (or any pepper of your choice)
  • 1 tomato (chopped)
  • 1 tbsp Caribbean green seasoning
  • 1 - 2 tsp salt
  • 1 tbsp oil

Instructions

  • Wash and chop the bodi, tomato, onion and pepper.
  • Grate the garlic.
  • Grind the seasonings.
  • Place a small pot on medium heat.
  • Add oil and leave to heat up.
  • Saute onions until translucent (2 minutes).
  • Add garlic, pepper and green seasoning.
  • Stir for a minute.
  • Mix in bodi and tomato.
  • Stir to coat with oil and onions.
  • Add salt.
  • Cover and leave to steam for 10 minutes (if the bodi is sticking, add a little water).
  • Remove the cover and cook until the bodi is soft (about 5 minutes more).
  • Serve hot.
