Fried Plantain Chips Recipe

Fried plantain chips are tasty alternatives to potato. They can be starchy or sweet depending on the ripeness of the plantain and that adds a wonderful flavorful element to the chips.

Ingredients

  • 2 plantains (green, half ripe and ripe plantains all work for this recipe)
  • 1 tsp salt
  • cups oil for frying

Equipment

  • Mandoline slicer

Instructions

  • Place a large pot on medium heat.
  • Add enough oil for deep frying.
  • Allow to heat up for 5 – 10 minutes.
  • Wash the plantains and cut off their ends.
  • Cut into the skin only along the length of the plantain.
  • Peel off to remove the skin.
  • Slice the plantain thinly.
  • Add to hot oil and cook for 4 minutes.
  • Flip over and cook for another 4 minutes until the chips are golden brown and crispy.
  • Remove plantain chips from the oil.
  • Place on paper napkins to drain.
  • Add another batch to the hot oil and continue frying. Repeat steps 8 to 11.
  • Sprinkle salt and your choice of seasoning.
  • Serve hot with dipping sauces.
