Place a large pot on medium heat.
Add enough oil for deep frying.
Allow to heat up for 5 – 10 minutes.
Wash the plantains and cut off their ends.
Cut into the skin only along the length of the plantain.
Peel off to remove the skin.
Slice the plantain thinly.
Add to hot oil and cook for 4 minutes.
Flip over and cook for another 4 minutes until the chips are golden brown and crispy.
Remove plantain chips from the oil.
Place on paper napkins to drain.
Add another batch to the hot oil and continue frying. Repeat steps 8 to 11.
Sprinkle salt and your choice of seasoning.
Serve hot with dipping sauces.
