Ingredients
250gall purpose flour(2 cups of sifted flour)
8gyeast
25gsugar(2 tbsp)
6gsalt(1 tsp)
3medium eggs(approx. 160 g)
185gbutter(3/4 cup)
15mLmilk(optional; 1 tbsp)

Instructions
Bring the flour, yeast, sugar, salt and eggs to room temperature by keeping them on the countertop for at least an hour.
Add the flour, yeast, sugar, salt and eggs to a large bowl or stand mixer.
Mix together.
Knead for approx. 10 minutes to form a sticky dough (add milk if the dough is too dry).
Cube the cold butter.
Add one cube to the dough and incorporate fully.
Repeat until all of the butter is incorporated.
Cover.
Leave to proof for 2 hours.
Place the dough in the fridge overnight (for at least 8 to 12 hours).
Remove from the fridge. Place on the countertop for 1 hour.
Grease a loaf pan.
Divide the dough into 6 balls.
Place the balls in the loaf pan side by side.
Cover.
Leave to proof for 1 hour.
Preheat the oven at 350°F.
Bake the loaf for 25 to 30 minutes.
Notes
For a healthier, less buttery brioche, reduce the butter to 110g (or 1/2 cup).
