- 2 cups diced cucumbers (2 Kirby cucumbers)
- ½ cup diced tomatoes (2 roma tomatoes)
- ¼ cup diced red onion (1 small red onion)
- 2 tbsp chives (chopped)
- 1 tsp olive oil
- 1 tsp raspberry infused balsamic vinegar
- 1 tsp brown sugar
- ½ tsp salt
- ½ tsp oregano
Wash, peel and dice the cucumbers and red onions.
Wash and chop the tomatoes and chives.
Mix the dressing ingredients (oil, vinegar, sugar, salt and oregano) together in a small bowl.
Add the dressing to the prepped veggies.
Toss to coat everything.
Serve immediately or leave to chill in the fridge and serve cold.
