Ingredients

  • 2 cups diced cucumbers (2 Kirby cucumbers)
  • ½ cup diced tomatoes (2 roma tomatoes)
  • ¼ cup diced red onion (1 small red onion)
  • 2 tbsp chives (chopped)
  • 1 tsp olive oil
  • 1 tsp raspberry infused balsamic vinegar
  • 1 tsp brown sugar
  • ½ tsp salt
  • ½ tsp oregano

Instructions

  • Wash, peel and dice the cucumbers and red onions.
  • Wash and chop the tomatoes and chives.
  • Mix the dressing ingredients (oil, vinegar, sugar, salt and oregano) together in a small bowl.
  • Add the dressing to the prepped veggies.
  • Toss to coat everything.
  • Serve immediately or leave to chill in the fridge and serve cold.
