Banana chia pudding
This banana chia pudding tastes amazing, pretty similar to banana bread! It's also easy-to-make, vegan, dairy-free and a great overnight chia seed pudding that's healthy and perfect for breakfast.

- 2 medium bananas (or 1 large banana)
- 1 cup milk (like almond milk)
- ¼ cup chia seeds
- ½ tsp vanilla
- ¼ tsp cinnamon
- ½ tsp honey (optional)
- toppings (like banana slices, chopped nuts, berries, shredded coconut)
Wash and peel bananas.
Add to a small bowl.
Mash to your desired consistency (chunky or smooth).
Pour in the milk, vanilla, and cinnamon.
Whisk to combine.
Taste test. Adjust sweetness with honey if necessary.
Add the chia seeds.
Whisk together.
Pour 1 cup of the mixture into each serving glass.
Cover.
Refrigerate for 2 hours to overnight before serving.
Top with desired toppings like banana slices, chopped nuts, berries, etc.
Use within 2 to 3 days.
