Brown Stew Chicken Trini Style

- 3 lbs chicken pieces
- flour or lime juice for washing the meat
Seasoning 
- 1 onion (chopped)
- 1 scotch bonnet pepper (chopped)
- 3 tbsp Caribbean green seasoning (chadon beni, garlic, Spanish thyme)
- 2 tbsp ginger
- 1 tbsp Worchester sauce
- 1 tbsp soy sauce
- 2 tsp salt
Stew
- 2 tbsp oil
- 2 tbsp brown sugar
- 2 cups water
- salt to taste
- pepper to taste
Clean and Season
- Clean chicken pieces removing fatty tissue, cartilage and slime. 
- Rinse the meat. 
- Mix the meat with flour or lime juice. 
- Rinse the meat again. 
- Add onion, pepper, Caribbean green seasoning, ginger, salt and sauces. 
- Cover and set aside to marinate for a few hours to overnight. 
Stew
- Place a large pot on medium heat. 
- Add oil and leave to heat up for 2 minutes. 
- Add sugar. 
- After a minute, stir the sugar occasionally. 
- Stir more often as the sugar melts and bubbles. 
- When the sugar turns very dark and smokes, add the marinated chicken pieces. 
- Mix to coat the pieces. 
- Cover the pot and leave for the meat to spring its own natural liquid. 
- Remove the cover after 15 minutes. 
- Stir occasionally and allow the liquid to boil off (another 10-15 minutes). 
- When the meat is dry, add water and optional ingredients. 
- Cook until the sauce has thickened (about 10 minutes). 
- Serve hot.
