- 4 cups cucumbers, diced (about 4 Kirby cucumbers)
- 2 cups tomatoes, diced (about 2 large beefsteak tomatoes)
- 1 cup red onion, diced (about ½ large red onion
- 1 cup feta, cubed or crumbled
Dressing
- 2 tbsp olive oil
- 2 tbsp lemon juice (about 1 lemon)
- 2 tbsp honey
- 2 cloves garlic, minced
- 2 tsp Italian seasoning
- 2 tsp salt
- 1 tsp black pepper
Wash, peel and dice the cucumbers and red onion.
Wash and cut the tops of the tomatoes. Dice.
Remove the feta from the packaging. Dice.
Wash, cut in half and squeeze the lemon.
Wash, peel and mince the garlic cloves.
To a small bowl, add the oil, lemon juice, honey, minced garlic, seasoning, salt and pepper. Whisk.
Add all the prepped veggies and feta to a large bowl.
Pour the whisked dressing over the veggies and feta.
Toss to combine.
Chill in the fridge. Serve cold.
