While the intent here is to have a light, mild dressing, feel free to turn it up a notch and double the ingredients of the dressing for a bolder, brighter salad.

Cucumber tomato feta salad ingredients

  • cucumber: I usually use small Kirby cucumbers for all my cucumber recipes.
  • tomatoes: you can use Roma, beefsteak or even cherry tomatoes here. I had beefsteak ones so that’s what I used.
  • red onion
  • feta cheese: a small cheese block or already crumbled feta work here.
  • olive oil: I usually use Bragg olive oil.
  • lemon juice: brightens up the salad.
  • honey: this adds sweetness and balances the acid.
  • garlic: while I used freshly minced garlic, you can substitute with garlic powder or garlic granules.
  • Italian seasoning: toss in your favorite dried herbs here like oregano or basil too.
  • salt
  • black pepper

How to make this cucumber tomato onion feta salad

Prep the ingredients

For this recipe, I washed, peeled and diced the cucumbers and red onion. If you are growing your own cucumbers or buying from organic farmers, then feel free to leave the cucumber skin on.

I washed the tomatoes, removed the tops and diced them too along with a small block of feta cheese. Here’s a look at everything prepped.

Mix the dressing

I washed a lemon, cut in half and squeezed to get fresh juice. I also peeled and finely chopped some garlic cloves here (although I would suggest mincing the garlic!).

In a small bowl, I added the olive oil, freshly squeezed lemon juice, honey, minced garlic, Italian seasoning, salt and pepper.

Toss together

All that’s left to do is simply pour the dressing all over the veggies and feta and toss to coat everything. You can taste test to see if the salad has enough salt and adjust accordingly.

As I said, this is a mild dressing so it’s not particularly noticeable. Feel free to add in extra oil, lemon and honey if you like along with fresh herbs.

This is a large bowl of salad! Be sure to cover and store in the fridge until you are ready to serve.

Ingredients

  • 4 cups cucumbers, diced (about 4 Kirby cucumbers)
  • 2 cups tomatoes, diced (about 2 large beefsteak tomatoes)
  • 1 cup red onion, diced (about ½ large red onion
  • 1 cup feta, cubed or crumbled

Dressing

  • 2 tbsp olive oil
  • 2 tbsp lemon juice (about 1 lemon)
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 2 tsp salt
  • 1 tsp black pepper

Instructions

  • Wash, peel and dice the cucumbers and red onion.
  • Wash and cut the tops of the tomatoes. Dice.
  • Remove the feta from the packaging. Dice.
  • Wash, cut in half and squeeze the lemon.
  • Wash, peel and mince the garlic cloves.
  • To a small bowl, add the oil, lemon juice, honey, minced garlic, seasoning, salt and pepper. Whisk.
  • Add all the prepped veggies and feta to a large bowl.
  • Pour the whisked dressing over the veggies and feta.
  • Toss to combine.
  • Chill in the fridge. Serve cold.
