- ½ cup white sugar (113 g)
- ½ cup boiling water (108 grams)
- ¼ cup ginger (grated and peeled) (approx. 42 grams or 3-inch piece)
Wash, peel and grate the ginger.
Add a small saucepan on medium heat.
Pour in the boiling water and sugar.
Stir and allow to dissolve for 2 minutes.
Add the grated ginger.
Reduce the heat to low.
Stir occasionally.
Allow to brew for 15 minutes.
Remove from the heat.
Set aside to cool for 30 minutes.
Strain.
Use immediately or refrigerate. Will last for 3 to 5 days.
