Ginger Syrup Recipe: Small Batch, Homemade Simple Syrup Recipe
This ginger syrup recipe is so easy to make and the syrup is incredibly versatile. Use it to make cocktails, mocktails and even homemade ginger ale. It’s also a great, spicy sweetener for tea and salad dressing.
I’m such a ginger fan so I absolutely love pouring this in my lemonade, all over my salads, and even when I’m having a small fruit plate. The sweet-spicy contrast is oh so good!

For this recipe, I used a small grater or zester to grate the ginger and a strainer.
How to make ginger syrup
This recipe calls for two parts boiling water, two parts sugar, and 1 part grated, fresh ginger root. So, if you want to scale up the recipe to make a large batch, adjust the measurements accordingly.
This recipe yields 1/2 cup of ginger simple syrup so feel free to scale up for more syrupy goodness.
Let’s get into how to make ginger syrup.
Prep
The main prep involves washing, peeling and grating the ginger. I started with about 50 grams of ginger (roughly about a 3-inch piece). After peeling, it measured about 42 grams.
As I mentioned, I used a small grater to finely grate the ginger. Here’s a look at everything after prep.

Make the syrup
For the syrup, I added a small saucepan on medium heat and poured in the boiling water and sugar. You can stir this occasionally for the sugar to dissolve for about 2 minutes.

Once dissolved, I added in the grated ginger and reduced the heat to the low setting.

You can stir ever so often as the ginger syrup simmers. After 5 minutes, the syrup has a strong, sharp ginger taste, but by the 10-minute mark, the sharpness reduces. At the 15-minute time, the syrup has a milder, wonderful taste. I turned off the heat at this point and removed the pot from the stove.

Here, I set it aside to cool and steep for about 30 minutes. It doesn’t need a long steep time since the ginger is grated and released most of its flavor while brewing.

All that’s left is to strain the syrup. You can use it immediately or refrigerate. It can last for about 3 to 5 days in the fridge.

Ingredients
- ½ cup white sugar (113 g)
- ½ cup boiling water (108 grams)
- ¼ cup ginger (grated and peeled) (approx. 42 grams or 3-inch piece)
Instructions
- Wash, peel and grate the ginger.
- Add a small saucepan on medium heat.
- Pour in the boiling water and sugar.
- Stir and allow to dissolve for 2 minutes.
- Add the grated ginger.
- Reduce the heat to low.
- Stir occasionally.
- Allow to brew for 15 minutes.
- Remove from the heat.
- Set aside to cool for 30 minutes.
- Strain.
- Use immediately or refrigerate. Will last for 3 to 5 days.
