Ingredients for this ginger pineapple shot

  • pineapple: I used a fresh pineapple but you can use frozen unsweetened pineapple chunks. Sweetened canned or sweetened frozen pineapple can be used as a last resort and you probably won’t need a sweetener.
  • lemon
  • honey: any sweetener would work here. I prefer the honey since it balances the sharpness of the ginger.
  • ginger

Equipment for this recipe

A mini blender would be helpful for making this small recipe. A coffee grinder would also work well here since it’s a really small volume of liquid to blend (that’s what I used here since I’m traveling!).

Of course, you can scale up the recipe to make a larger batch and use a regular sized blender or juicer.

How to make this pineapple ginger shot

Prep the ingredients

I’m using a fresh pineapple for this recipe so I washed, peeled and diced the pine. Of course, you’ll have extras so use it to make your favorite salads, salsas and even pineapple chow.

If you are using frozen or canned pineapple, rinse them thoroughly as they usually contain lots of sugar. It’s best to use unsweetened pine though!

Taste test the pineapple to know how sweet or tart it is. This can help you adjust up or adjust down the level of honey (or sweetener) you’d need to add to the shot.

Wash, cut and squeeze the lemon for fresh lemon juice. The lemon I used here gave me about 2 tablespoons of juice.

Wash, peel and finely chop the ginger. Some people leave the skin on the ginger and that’s fine but I prefer peeling mine.

Blend

Add the diced pineapple, ginger and lemon juice to the mini blender along with honey. Blend everything until smooth.

Pour into your shot glasses or bottles. You can serve immediately or leave in the fridge to chill. I prefer it colder but the fiber separates in the drink. That’s perfectly fine for me but you can stir before chugging it.
