Refreshing Watermelon Feta Mint Salad Recipe

I really love this watermelon feta mint salad recipe and I’m sure you’ll love it too! It’s the perfect summer salad to enjoy when it’s hot out and you don’t feel like cooking. And it’s a great side for grilled meats or even roasted chickpeas.

Ingredients for watermelon feta mint salad

  • watermelon: I actually used a ripe watermelon with seeds for this recipe and removed the seeds by hand but you can use any sweet, seedless varieties available to you.
  • cucumber: Kirby cucumbers are my go-to.
  • red onion: this adds nice sharpness to contrast the sweet melon.
  • feta cheese: a small cheese block or already crumbled feta can be used for this recipe.
  • mint: fresh mint leaves are delightful! If you have any stems, try planting them in the garden to see if they grow.
  • honey: you don’t need much here since the melon is already sweet.
  • lemon juice: adds a nice, citrusy acid to the salad.
  • salt
  • black pepper: you can also use cayenne or paprika here for a smoky flavor.

You don’t need any special equipment to make this simple, refreshing salad.

How to make watermelon feta salad with mint

Prep ingredients

I used half of a quarter wedge of watermelon to make 2 salad servings. Feel free to use an entire quarter wedge to double the recipe in order to make 4 servings. Or scale up as much as you like (an entire watermelon will be 8x the recipe)!

To prep the watermelon, I sliced into the red flesh to form cubes before cutting them off the rind. Since I used a melon that had seeds, I removed the black and white ones with the back of a teaspoon.

I washed, peeled and diced a small cucumber and a small red onion. I washed and finely chopped the mint leaves and I cut the feta cheese into small cubes.

As for the dressing, it was pretty simple to make. I mixed together the honey, lemon juice, salt and pepper in a tiny bowl.

Combine

I added the prepped watermelon, cucumber, red onion, feta and mint leaves to a large bowl before pouring the dressing over everything.

All that’s left is to gently mix the ingredients to combine everything and allow the dressing to be distributed throughout. Gentle is key here since the watermelon cubes can turn into mushy juice if you overmix.

That’s pretty much it! You can serve immediately or store in the fridge to chill. The salad is best when it’s cold and can stay in the fridge for a day or so.

Ingredients

  • cups watermelon cubes
  • 1 cup cucumber (1 small Kirby cucumber)
  • ¼ cup red onion (1 small red onion)
  • ¼ cup feta cheese (1½ oz)
  • 1 tbsp mint leaves
  • 1 tsp honey
  • 1 tsp lemon juice
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  • Cut the watermelon into cubes. Remove the seeds.
  • Wash, peel and dice the cucumber. Do the same for the red onion
  • Wash and finely chop the mint leaves.
  • Cube the feta (skip if using crumbled feta).
  • In a small bowl, mix the honey, lemon juice, salt and pepper dressing together.
  • Add the prepped watermelon, cucumber, red onion, and mint to a large bowl.
  • Pour the dressing over the ingredients.
  • Gently mix to combine.
  • Serve cold.
