Pineapple recipes
1. Pineapple ginger shots
Okay, this is one of my favorite fresh pineapple recipes. It’s such a healthy way to start the morning and takes just a couple minutes to make. You only need freshly peeled pineapple chunks, ginger, lemon juice and honey to make this tasty immunity shot.

2. Pineapple cucumber salad
Perfect for summer or when the weather is hot out, this pineapple cucumber salad hits all the right notes. It’s sweet, spicy, tangy and low carb!
It’s a great side for a light lunch alongside a BBQ protein. Or have a cozy dinner with the salad and pan seared chicken breast or baked salmon.

3. Pineapple margarita
With pineapple juice, you can make a simple, yet refreshing, pineapple margarita. For my recipe, I used store-bought pineapple juice, lime juice, tequila and triple sec.
This cocktail has such a fun, tropical vibe that it’s perfect for hot summer days, beach picnics, or when you just want to manifest a Caribbean vacay!

4. Pineapple upside down cake
This has to be one of my favorite pineapple dessert recipes. Pineapple upside down cake is pretty popular here in Trinidad and Tobago (and probably all around the world!). It’s a must for every Trini Christmas!
It’s made with all the typical cake ingredients plus pineapple slices, pineapple juice (or syrup) and maraschino cherries. The base of the cake is lined with sugar, pineapple slices and cherries and, during baking, the sugar caramelizes and develops a beautiful syrup. Once out of the oven, the cake is flipped over to create a decadent, pineapple dessert.

5. Pineapple turmeric shot
Here’s another healthy pineapple recipe, made with fresh pineapple. This tasty turmeric immunity shot has all the good stuff: pineapple, lemon, ginger, turmeric and honey! Each ingredient brings a ton of antioxidant and anti-inflammatory benefits to the party!
Oh and we can’t forget to sprinkle a little black pepper on top. The pepper helps the body absorb the important compounds in turmeric.

6. Pineapple chow
Chow is a quintessential Trini snack! You can say it’s a super simple salad but it is bursting with incredible salty, sweet, and spicy flavors. While pineapple chow is pretty popular here, you can also use the same seasonings to make mango chow and cucumber chow too.
I keep my recipe simple so you only need fresh pineapple chunks, chadon beni leaves (culantro), fresh pepper and salt. Garlic, lime juice, and even salt prunes can also be added in for much more flavor.
Now, if you’ve never heard of culantro before or don’t have easy access to the herb, you can easily swap for cilantro or store-bought Caribbean green seasoning. And, know that once you make this recipe, you’ll always want more!

These are the pineapple recipes I have on the blog. Most are fresh pineapple recipes but you can find a couple that needs store-bought slices and juice.
Pineapple is such a versatile fruit and there are tons more you can make with it. But, these super simple recipes shouldn’t be overlooked either!
