Ingredients for chocolate peanut butter chia pudding

  • peanut butter: any type of peanut butter – smooth or chunky – would be great. Here, I’ve used smooth peanut butter.
  • cocoa powder: I got my hands on a great cocoa powder that I’m using for all my chocolate recipes. It’s so good!
  • chia seeds: organic chia seeds are my go-to.
  • milk: my preference is almond milk, but you can swap for dairy or non-dairy milk like oat or coconut.
  • vanilla: this adds a beautiful subtle flavor.
  • honey or agave: this balances the slight bitterness of the cocoa powder. Feel free to use your favorite sweetener instead like sugar or maple syrup.
  • toppings: [optional] you can serve the chia pudding plain or top them off with some fun, healthy ingredients. I’m using walnuts but you can use banana slices, yogurt, shredded coconut, extra peanut butter, or granola.

Equipment

No special equipment is needed for this recipe, though I did use a whisk to bring all the ingredients together.

How to make chocolate peanut butter chia seed pudding

Prep

Here’s a look at all the ingredients I used.

There’s very little prep needed for this recipe other than heating the peanut butter in the microwave for 1 minute until it becomes soft and runny.

That’s pretty much it.

Make the chia pudding

I added all the ingredients to a mixing bowl, including the runny peanut butter.

I whisked everything together until fully combined. It does take a little effort since the peanut butter is oil-based but, with a little elbow grease, it eventually incorporated fully.

I added the mixture to 2 serving glasses – a little over 1/2 cup of the mixture went to each glass. I popped them in the fridge for the chia seeds to absorb the liquid.

You can enjoy the chia pudding about an hour later or leave them overnight (or 2). It can last in the fridge for a couple days.

When you are serving, feel free to add toppings of your choice on there to up the nutrition. I added walnuts on my peanut butter chocolate chia seed pudding.

Ingredients

  • 2 tbsp peanut butter
  • 1 tbsp cocoa powder
  • ¼ cup chia seeds
  • 1 cup almond milk
  • 2 tbsp agave or honey
  • ½ tsp vanilla
  • toppings (like walnuts, banana slices, extra peanut butter, berries, shredded coconut and more)

Instructions

  • Place the peanut butter in the microwave.
  • Microwave for 1 minute (or until peanut butter is runny).
  • To a mixing bowl, add the runny peanut butter, cocoa powder, chia seeds, almond milk, honey (or agave) and vanilla.
  • Whisk until combined fully.
  • Divide into 2 portions (approx. ½ cup each).
  • Refrigerate for 1 hour. Or up to 2 days.
  • Serve cold with your choice of toppings.
