Sweet Potato Brownies Recipe: Easy Chocolate Dessert
I adore brownies! And I’m always looking for secret ways to add more nutrition to them. These sweet potato brownies certainly sneak some good ingredients in there.
Sweet potato, peanut butter, and honey add some extra goodness to these easy treats. In fact, sweet potato is loaded with Vitamin A.
Now, I’m not saying the brownies are super healthy or anything. But, when you’re craving delicious desserts, why not reach for ones with a bit more vitamins, protein, and natural sweeteners?

Ingredients for sweet potato brownies
Equipment
For this recipe, you will need an 8×8 inch baking dish. You can also use a cake mixer if you like but it really is not necessary.
How to make these sweet potato brownies
Prep the ingredients
Wash and peel the sweet potato. It’s helpful to run tap water over the potato while peeling since the flesh can release a white, sticky latex. Cut the sweet potato into small cubes. Add to boiling water in a small saucepan on medium heat and allow to cook until soft, about 20 minutes.
Once soft, drain the sweet potato and mash until smooth. Set aside to cool.
Skip this step if you are using sweet potato puree.
Mix the batter
Add the cooled, mashed sweet potato to a large bowl. Mix in the peanut butter, honey and eggs until smooth and well incorporated.

To a separate bowl, combine the dry ingredients together: the all purpose flour, baking powder, salt and cocoa powder.
Stir the dry ingredients into the wet batter until everything is well mixed. Fold in the chocolate chips.

Bake
Preheat the oven at 350°F.
Butter and flour your square (8″x8″) baking dish or line it with parchment paper.
Pour the sweet potato brownie batter into your prepped baking dish. Gently press down the batter into the sides to prevent any air pockets. Add some extra chocolate chips on top too!

Pop in the oven to bake for 25 to 30 minutes. Check for doneness by inserting a butter knife or toothpick in the center. If it comes out clean, then your brownies are done!

Set aside to cool before cutting into them. This recipe makes about 12 beautiful brownies! Store in the fridge for about 3 to 4 days (unless it’s completely devoured before!) or keep in the freezer for 2 to 3 months.

Ingredients
- 1 medium sweet potato (or ½ cup sweet potato puree)
- ½ cup peanut butter
- ⅓ cup honey
- 2 eggs
- ½ cup all purpose flour
- ½ tsp baking powder
- ⅓ cup cocoa powder
- ¼ tsp salt
- ½ cup chocolate chips

Instructions

- Add to a small pot of boiling water on medium heat. Boil until soft (approx. 20 minutes).
- Drain, mash until smooth (it should be ½ cup).
- Set aside to cool.
- Preheat the oven at 350°F.
- To a large bowl, add the cooled mashed sweet potato, peanut butter, honey and eggs.
- Mix fully until smooth.
- To a separate bowl, add the all purpose flour, baking powder, cocoa powder and salt. Mix.
- Add the dry ingredients to the wet batter.
- Combine fully.
- Fold in the chocolate chips.
- Add the batter to an 8×8 inch baking dish lined with parchment paper or coated with butter.
- Press down gently to remove any air pockets.
- Bake for 25 to 30 minutes.
- Check for doneness with a toothpick (it should come out clean).
- Remove from the oven.
- Set aside to cool fully.
- Cut into 12 brownies.
- Serve warm or chilled. Store in the fridge for 3-4 days or months in the freezer.
