Simply Perfect Cucumber Tomato Onion Salad Recipe (just 9 ingredients!)
Who doesn’t love a tasty cucumber tomato onion salad recipe? It is the perfect, simple side for your summer plate plus you can pack in a lot of healthy veggies in it.

Ingredients for this cucumber tomato salad
Steps for making this cucumber tomato onion salad
Prep veggies
Wash, peel and dice the cucumbers and red onion. You can leave the skin on the cucumbers if you like but I prefer peeling them. Wash and chop the tomatoes and chives.

Make the simple dressing
Mix together the olive oil, balsamic vinegar, sugar, salt and dried herb of your choice.

Combine
Pour the dressing over the veggies and toss to coat everything fully. You can serve immediately or pop the salad in the fridge to soak in all that flavor. Salads are always better cold anyway!

This is a small salad so there shouldn’t be any leftover. But if there is, keep it refrigerated and enjoy within 2 days.
What to serve with the cucumber tomato onion salad
This side is incredibly versatile so you can serve it with this delicious honey wholegrain mustard salmon for a low carb lunch or dinner. Pan grilled chicken breast would also be great too.

Cucumber tomato onion salad
Ingredients
- 2 cups diced cucumbers (2 Kirby cucumbers)
- ½ cup diced tomatoes (2 roma tomatoes)
- ¼ cup diced red onion (1 small red onion)
- 2 tbsp chives (chopped)
- 1 tsp olive oil
- 1 tsp raspberry infused balsamic vinegar
- 1 tsp brown sugar
- ½ tsp salt
- ½ tsp oregano
Instructions
- Wash, peel and dice the cucumbers and red onions.
- Wash and chop the tomatoes and chives.
- Mix the dressing ingredients (oil, vinegar, sugar, salt and oregano) together in a small bowl.
- Add the dressing to the prepped veggies.
- Toss to coat everything.
- Serve immediately or leave to chill in the fridge and serve cold.
