Who doesn’t love a tasty cucumber tomato onion salad recipe? It is the perfect, simple side for your summer plate plus you can pack in a lot of healthy veggies in it.

Enjoy the salad with grilled seafood, BBQ, or even some roasted chickpeas. It’s a great snack on its own but adding your favorite protein can make it a great filling meal.

Ingredients for this cucumber tomato salad

  • cucumbers: I used Kirby or pickling cucumbers.
  • tomatoes: like Roma tomatoes.
  • red onion
  • chives: you can substitute for your favorite fresh herbs like basil, parsley or cilantro.
  • olive oil
  • infused balsamic vinegar: I tried a raspberry infused balsamic vinegar that adds a beautiful, mild berry taste. You can pick up a similar infused vinegar on Amazon or substitute for regular balsamic.
  • sugar: I used brown sugar but white sugar will do. You can also use honey or maple syrup.
  • salt
  • dried oregano: I love the flavor of oregano but you can swap for your favorites like thyme or marjoram.

Steps for making this cucumber tomato onion salad

Prep veggies

Wash, peel and dice the cucumbers and red onion. You can leave the skin on the cucumbers if you like but I prefer peeling them. Wash and chop the tomatoes and chives.

Make the simple dressing

Mix together the olive oil, balsamic vinegar, sugar, salt and dried herb of your choice.

Combine

Pour the dressing over the veggies and toss to coat everything fully. You can serve immediately or pop the salad in the fridge to soak in all that flavor. Salads are always better cold anyway!

This is a small salad so there shouldn’t be any leftover. But if there is, keep it refrigerated and enjoy within 2 days.

  • 2 cups diced cucumbers (2 Kirby cucumbers)
  • ½ cup diced tomatoes (2 roma tomatoes)
  • ¼ cup diced red onion (1 small red onion)
  • 2 tbsp chives (chopped)
  • 1 tsp olive oil
  • 1 tsp raspberry infused balsamic vinegar
  • 1 tsp brown sugar
  • ½ tsp salt
  • ½ tsp oregano

Instructions
